Breakfast? Steel Cut Oats

Steel Cut Oats. Breakfast of Champions.



People say they take too long to cook... 10 minutes is too long?(with most of that time available for you to do something else) Not a quick as nuking a pop tart but still....

If you cook them for a long time you get a bowl of mush - if that's what you're going for then regular quick oats would work just fine. 

But if you prefer texture - chewy bits of oats with your fresh berries and bananas then steel cut oats is the way to go. 


Cook day of - SERVES 2 (one mama bear sized 1/3 and one papa bear sized 2/3)
(See below for large batch version that keeps in the fridge)

Before you go to bed add:
1/2 cup steel cut oats
1 1/2 cups water
to a medium sauce pan with a heavy bottom and good fitting lid.

Allow to soak overnight (if you forget to soak it, plan to let it sit 10 minutes longer in the morning after bringing to a boil)

In the morning Bring the oats and water to a full rolling boil then turn off the heat. (I like to add a handful of Goji berries at this point but that's totally optional.) When the water/oats settle down, put the lid on it but leave it on the burner.

Chop and or rinse any fruit you'd like and add it to your serving bowls. I usually add a whole banana (split between both bowls), blueberries, raspberries and blackberries. You can also add apples, peaches or any fruit in season.

Now unload your dishwasher while you're waiting for it to cook - or get dressed, feed your dog or whatever. The oats can actually sit for a while and not burn or get mushy. You may have to reheat them for a minute when you're ready to eat but they will be the perfect consistency!

READY TO EAT?
I like to add to the oats:
Ready to sit wth a lid on it
1 tsp cinnamon
1 TBS Chia seeds
1 TBS Hemp Seeds
2 TBS Brown Sugar (Honey or whatever sweetener you have is fine, or try it without)
2 TBS Almond butter *recipe below

Stir into the oats adding a few tablespoons of water if needed and turn the heat back up until they are hot again (it only takes a minute or two if you turn it on hi and stir)

Put it on your fruit with a TBS of chopped almonds.





Large batch version to keep in fridge and just microwave as needed:
8 cups water
2 1/2 cup steel cut oats
large handful Goji berries (optional)
2/3 cup seed mixture (equal parts ground flax seeds, hemp seeds and chia seeds) 
1/3 cup good cinnamon - Name brand or Costco (double that if using a generic brand)
2/3 cups brown sugar (I have been leaving this out and adding a little honey each day)
1/3 - 1/2 cup almond butter

Stir water, oats and goji berries in a large pot and bring to boil. Turn off heat and whisk in seed mixture cinnamon and brown sugar (if using). Set on a cooling rack if you have an electric stove, otherwise you can leave it on the burner with the burner turned off. After about 5 minutes the mixture will have thickened and you can whisk in the almond butter. pour into a shallow container and cover, I often use two. (A deeper container will allow the outside to cool while the middle stays hot and keeps cooking. Unless you plan to stir it as it cools, a shallower container is better.) Store in fridge. Do not stack until both containers are cool. You can eat it the same day but may need to allow the portion you will eat to stand for a few more minutes. You also may need to add a bit of water to the oats when you warm them to get to proper consistency.

Pancakes

These are easy to make, freeze well and taste great.

1 cup all purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/4 tsp salt
1 beaten egg
1 cup milk
2 tablespoons oil

In a bowl,(I use a wisk)beat the egg then add the milk and oil. Mix until frothy. Then add sugar, salt, and baking powder. Wisk again then add the flour. Wisk until blended but still slightly lumpy. Then let the batter set of 15 to to 20 min. This also the baking powder to work and the mixture to thicken. If it is still to thin add mor floye 1/4 cup at a time.

Yummy thing to add to the pancakes as they cook. Chocolate chips, blueberries, or or chopped pecans.

I eat them plain.

Breakfast Casserole

Sorry about the lack of posting, but I am back (at least this week). I just made this tonight, and it is SO yummy! We are fans of breakfast for dinner, so this was perfect. We will definitely be making this again.


P.S. If you need a little more flavor, syrup works well on this (at least for Jordan)

Strawberry Crepes


I know I've been MIA. Sorry.






This is what we usually have for Conference Breakfast.




Basic Crepes

2 eggs
1 ¼ cup milk
1 C. plain flour
¼ tsp salt
spoonful of sugar
2 Tbl oil



Mix eggs, salt, oil and ½ the milk & flour till smooth. Then add remainder of milk. Blend till smooth. Let set for 1 hr before use. It should be really runny, you want these thin. I may have done less flour now that I think about it.





Put apple pie filling, or choc. Pudding in middle. Or my favorite, cut up strawberries and put in vanilla yogurt. YUM! Top with whipped cream Or a few strawberries.

Gingerbread Waffles


Ingredients

1/4 c. butter
1/2 c. packed brown sugar
1/2 c. light molasses
2 beaten eggs
1 c. milk
2 c. flour
1 1/2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. allspice
1/2 tsp. salt

Cream toghether butter, sugar, molasses, eggs, and milk. Stir together flour, cinnamon, ginger, allspice, and slat. Combine dry and creamed ingredients. Pour in waffle iron and serve with syrup or your favorite waffle toppings. :)

Easy Pumpkin Muffins

I got this redipe from a friend. They are very easy and delicious. There are ways to make it easier which I will list at the bottom. They freeze well.

INGREDIENTS
1 (18.25 ounce) package yellow cake mix
1 (15 ounce) can pumpkin puree
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves



DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
Grease a 12 cup muffin pan or line with paper liners.
In a large bowl, mix together the cake mix, pumpkin puree, cinnamon, nutmeg and cloves until smooth.
Spoon equal amounts of batter into the prepared muffin cups.
Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted in the center of one comes out clean.
Notes:
I usually make these as mini muffins.
You can skip the spices by either using a spice cake mix or pumpkin pie filling that already has the spices in it.
If you want it a little spicer then use the spice cake mix and the prespiced pumpkin filling.

Special Occasion French Toast


This stuff is really good...taste wise, but probably not the healthiest. We only have it for general conference, but you could do it for Christmas, baby showers, Easter, etc...just any special occasion, and it is so worth it!

1 loaf bread
6 eggs
1/4 tsp. salt
1/8 tsp. nutmeg
2 cups milk
1 tsp. vanilla
1 tsp. cinnamon

Coat a 9x13 baking dish with cooking spray. Set aside. Cute bread into cubes. Beat eggs, milk, vanilla, cinnamon, salt and nutmeg in a large bowl until smooth. Pour over bread crumbs and refrigerate overnight or for at least 4 hours. When read to eat, make topping.

Topping:
1 cup brown sugar
1/2 cup butter
2 Tbs. corn syrup
1/2 cup chopped/sliced nuts (we use almonds)

In a small saucepan, combine brown sugar, corn syrup, butter and nuts and bring to a boil. Simmer until slightly thickened. Pour over bread and bake at 350 degrees for 40-45 minutes. Serve with powdered sugar, syrup or jelly.
